A better homemade granola

The secret to perfectly crunchy, crispy, chunky granola is egg whites!

Yes, egg whites and in combination with coconut oil it creates the most perfect crunchy bite. It may sound unconventional but it works wonders.

Your new snack obsession.

This is one of my obsession snack recipes for sure. It’s so simple, takes minimal brain energy and can be eaten literally anytime. My favorite way to eat is it either on its own or with yogurt and fresh berries. It’s so versatile and simple, really add any of your favorite dried fruit, nuts or spices, and it always tastes great. One of my recent variations is dried tangerines. I found these at Costco and they are amazing! Super tart and tangy, cut into small pieces they add so much to this homemade granola.

This is so simple, let’s get into it!

Start by adding all the dry ingredients into a large bowl. Whole rolled oats, all your chopped nuts, shredded coconut, flax, hemps seeds, cinnamon and salt all in the bowl, toss together.

Next add all the wet ingredients: Coconut oil, egg whites, maple syrup and honey. Mix really well with a spatula to full coat everything.

Pour on a sheet pan and pop in the oven. Every 10 minutes stir the granola to create an even golden brown color. After 25-30 minutes take out of the oven to cool. Add the dried fruit and enjoy! It’s so good!

INGREDIENTS

  • 3 cups whole rolled oats

  • 1/2 cup cashews, roughly chopped

  • 1/2 cup walnuts, roughly chopped

  • 1/2 cup other nut of choice (pistachios, almonds)

  • 1/2 cup Shredded unsweetened coconut (optional)

  • 1/4 cup hemp seeds

  • 1/4 cup flax seeds

  • 2 teaspoons ground cinnamon

  • 1/2 teaspoon kosher salt

  • 1/4 cup melted coconut oil

  • 1/4 cup egg whites (1 egg)

  • 2 tablespoons honey

  • 2 tablespoons maple syrup

  • 1 cup dried fruit, chopped into bit sized pieces such as dried cranberries, dried blueberries, raisins, dried tangerines, dried mangoes.

Notes:

The key to that perfect crunchy crispness is the egg whites. It totally changes the game and creates a light coats crunchy layer.

INSTRUCTIONS

  1. Preheat the oven to 330 degrees Fahrenheit.

  2. Into a large mixing bowl add whole rolled oats, all chopped nuts, shredded coconut, hemp seeds, flax seeds, ground cinnamon, and salt. Mix together with a rubber spatula.

  3. Next, add the wet ingredients: coconut oil, egg whites, honey, and maple syrup. Mix thoroughly until all the oats and nuts are evenly coated and there are no dry oat spots left.

  4. Prepare a large sheet pan with parchment paper (for easy clean up) and spread the granola evenly in a thin layer on the pan.

  5. Place in the oven and bake for a total of about 25-30 minutes. Every 10 minutes using a spatula toss the granola around to get evenly browned. Around the 25-minute mark it can start to go from golden brown and toasty to burnt quickly so keep an eye on it. You are looking for the granola to no longer look wet, and to start developing an even golden brown color.

  6. Once the granola is baked, set out on the counter to cool completely. It will get super crunchy once it starts cooling. Avoid mixing it right out of the oven to get those lovely big oaty clusters.

  7. Lastly, give your dried fruit of choice a rough chop and toss it on the pan giving a light mixing. This granola lasts about 1 week in an air-tight container.
